Insulin is a hormone, and like many hormones is a protein. Insulin is excreted by groups of cells within the pancreas called islet cells. The pancreas produces digestive enzymes and when carbohydrates are absorbed in to the bloodstream, the pancreas detects an increase in blood sugar and the responds releasing insulin.
